Warm Lentil, Kale & Tomato Salad

How do you like your lunches??? I like mine healthy, quick and cheap, and today is one of those days where it just felt like a chore because I have nothing in the pantry. Except for lentils…. so I thought there is no better way than to use up those week old veggies – literally killing two birds with one stone. And it actually turned out waaay tastier than I honestly thought it would!

For one serving, you will need:

  • 1 cup of lentils
  • 1 cup of kale
  • A handful of cherry tomatoes
  • 2 small sweet bell peppers (or half a red capsicum)
  • 1 teaspoon honey
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Pinch of salt and pepper, to taste

Let’s do this:
Step One: Heat up a little bit of extra olive oil in a pan, and toss your lentils in there over a medium heat.

Step Two: While the lentils are heating up, de-stalk your kale and chop it into chunks, along with your capsicum. Stir the kale, capsicum and whole cherry tomatoes in with the lentils.

Step Three: Mix together the honey, olive oil, lemon juice and salt and pepper. Scoop the mixture from the pan into a serving bowl, and toss in the dressing.

I really wanted to put a teaspoon of dijon mustard in with the dressing, but I didn’t have any 😦 You could also add pumpkin, sweet potato, anything you like really. It’s a very simple recipe that you can easily alter to suit your tastebud preferences!
