No-Bake Energy Bites

With summer being here, and trying to beat the snacking blues of winter, I thought I’d try to make some rolled oat energy bites people seem to be obsessed with these days. I adapted my recipe from CookingClassy’s recipe, so here we go!!

What You Need:

1/2 cup creamy peanut butter
1/2 cup honey
1 teaspoon vanilla extract
3 tablespoons cocoa powder
1 cup quick oats (or old fashioned oats), not cooked

Let’s Get Started!

Mix together peanut butter, honey, vanilla and cocoa powder. (If mixture seems too thick, then add a teaspoon of water). Add oats and stir until evenly coated. Pop the mixture into the fridge for about half an hour.
Remove from the fridge, roll into 1-inch balls, and store in an airtight container in the fridge.

You could also add chocolate chips, and/or roll them in shredded coconut!
